Ham-Bean Pot

Makes 6 servings.

Ingredients:

2 cups dried large lima beans
2 teaspoons salt
1 onion, sliced
1/2 cup diced green pepper
1 tablespoon butter or margarine
1/4 cup catsup
1/4 cup molasses
1 tablespoon vinegar
Dash of hot pepper sauce
1 tablespoon vinegar
Dash of hot pepper sauce
1 teaspoon dry mustard
1 1/2 cups ham scraps and small pieces

Directions:
In large saucepan, bring limas and 6 cups water to boil and boil 2 minutes. Remove from heat, cover and let stand 1 hour. Add salt and simmer 25 minutes, or until tender, Drain, reserving liquid. Cook onion and pepper in the butter 2 to 3 minutes. Combine catsup and next 4 ingredients. Add about 1 cup bean liquid. In 2 1/2-quart casserole or bean pot, layer beans, pepper-onion mixture, ham and liquid. Bake in slow oven (325°F) about 1 hour.
