Scalloped Ham and Eggs

Serves 4 to 6.

Ingredients:

4 tablespoons butter or margarine
2 tablespoons flour
3/4 teaspoon dry mustard
1 1/2 cups milk
Salt and pepper
6 hard cooked eggs, sliced
1 cup diced ham
1/4 cup chopped parsley
1 tablespoon fine dry bread crumbs
Paprika

Directions:
Melt 2 tablespoons butter and blend in flour and mustard. Gradually add milk and cook, stirring, until slightly thickened. Season with salt and pepper to taste. Layer eggs and ham in shallow 1 1/2 quart baking dish. Add parsley to sauce and pour over top. Dot with remaining butter and sprinkle crumbs and paprika. Bake in moderate oven (350°F) for 25 minutes, or until hot and bubbly.
