Pig Lickin’ Good Cake
Makes 16 servings.
Ingredients:
Cake:
1 (two layer) box of yellow cake mix
3/4 Cup vegetable oil
1 (11 ounce) can mandarin orange sections, undrained
4 eggs
Topping:
1 (3 1/2 ounce) package instant vanilla pudding
1 (20 ounce) can crushed pineapple, undrained
1 (4 ounce) container Cool Whip
Directions:
Combine cake mix, oil and mandarin oranges with syrup. Beat in eggs, one at a time. Mix well for 2 minutes. Pour into grease 13″ x 9″ cake pan. Bake in preheated 350°F oven for 25 to 30 minutes or until cake tests done. Let cool.
Prepare topping. Mix pudding with pineapple and let stand 5 minutes. Fold Cool Whip into pudding mixture. Frost cooled cake, then refrigerate until serving.
