Curried Pineapple Ham
Serves 4.
Ingredients:
1/2 cup chopped onion
2 1/2 tablespoons butter
3 tablespoons flour
1 cup chicken broth
1 can (15 1/2 ounces) pineapple chunks
2 tablespoons chutney, chopped
1 tablespoon curry powder
1/2 teaspoon salt
pepper to taste
2 cups ham chunks
Orange Rice
Directions:
In skillet, saute onion in the butter 2 to 3 minutes. Stir in flour, then gradually add broth and pineappple syrup, stirring. Stir in chutney, curry powder, salt and pepper and simmer 10 minutes. Add pineapple and ham chunks. Heat thoroughly and serve on Orange Rice.
Orange Rice:
Prepare 4 servings rice, adding grated rind of 1 orange before cooking.
