Ham and Mashed-Potato Casserole
Makes 4 servings.
Ingredients:
2 cups mashed potatoes (prepared without salt)
1 green onion, finely sliced
1/4 teaspoon thyme
1 to 1 1/2 cups diced ham
Seasoned salt and pepper
Milk
1 pimiento, cut up
1/2 cup shredded cheddar cheese
chopped parsley
Directions:
Mix first four ingredients and let stand a few minutes. Add seasoned salt and pepper to taste. If mixture is too dry, stir in a little milk. Add pimiento, put in 1-quart casserole and sprinkle with cheese. Bake in hot oven (400° F) 15 minutes, or until heated. Sprinkle with parsley.
