Ham and Succotash Soup

Ingredients

  • 2 tablespoons butter or margarine
  • 2 medium onions, chopped
  • 1 clove garlic, crushed
  • 1 bay leaf
  • 1/4 cup chopped celery leaves or 1 tablespoon dried celery leaves
  • 2 cups finely diced Chicagoland Ham
  • 1 can (1 pound) cream-style corn
  • 1 can (1 pound) green lima beans, undrained
  • 1 tall can evaporated milk
  • Salt and pepper

Instructions

  1. Melt butter in kettle.
  2. Add next 4 ingredients and cook about 5 minutes.
  3. Add potato, Chicagoland Ham, and 2 cups water.
  4. Bring to boil, cover and simmer 15 minutes, or until potato is tender.
  5. Add vegetables, milk, and salt and pepper to taste.
  6. Heat well.
