Ham Succotash

Ham Succotash

Yield: 4

Ingredients

  • 1 small onion, minced
  • 2 tablespoons butter or margarine
  • 1 1/2 cups fresh or 1 box (10 ounces) frozen lima beans
  • Salt and pepper
  • 1 box (10 ounces) frozen cut corn
  • 2 cups diced potatoes
  • 1 cup finely diced ham

Instructions

  1. Cook onion in the butter 2 to 3 minutes.
  2. Add 1/2 cup water, the beans, and salt and pepper to taste.
  3. Bring to boil and simmer, covered, 15 minutes, or until beans are almost tender, adding more water if mixture becomes dry.
  4. Add corn and cook, uncovered, 3 minutes, or until water is almost evaporated.
  5. Lightly brown ham cubes in skillet and add to mixture.

Notes

If desired, 2 tablespoons cream can be added to mixture with the ham.
