Scalloped Ham and Eggs

Scalloped Ham and Eggs

Yield: 4-6

Ingredients

  • 4 tablespoons butter or margarine
  • 2 tablespoons flour
  • 3/4 teaspoon dry mustard
  • 1 1/2 cups milk
  • Salt and pepper
  • 6 hard cooked eggs, sliced
  • 1 cup diced ham
  • 1/4 cup chopped parsley
  • 1 tablespoon fine dry bread crumbs
  • Paprika

Instructions

  1. Melt 2 tablespoons butter and blend in flour and mustard.
  2. Gradually add milk and cook, stirring, until slightly thickened.
  3. Season with salt and pepper to taste.
  4. Layer eggs and ham in shallow 1 1/2 quart baking dish. Add parsley to sauce and pour over top.
  5. Dot with remaining butter and sprinkle crumbs and paprika.
  6. Bake in moderate oven (350°F) for 25 minutes, or until hot and bubbly.
