Yield: 4


  • 1 Package (3 ounces) cream cheese
  • 1 cup milk, scolded
  • 6 eggs, slightly beaten
  • 1 cup diced ham
  • Salt and pepper
  • 2 tablespoons vegetable oil or drippings


  1. Beat Cream Cheese until fluffy, and gradually stir in milk
  2. Add eggs and ham and season with salt and pepper to taste
  3. Heat oil in skillet and add mixture.
  4. Cook slowly, stirring, until eggs are just set.
