Ham and Mashed Potato Casserole

Ingredients

  • 2 cups mashed potatoes (prepared without salt)
  • 1 green onion, finely sliced
  • 1/4 teaspoon thyme
  • 1 to 1 1/2 cups diced Chicagoland Ham
  • Seasoned salt and pepper
  • Milk
  • 1 pimiento, cut up
  • 1/2 cup shredded cheddar cheese
  • chopped parsley

Instructions

  1. Mix first four ingredients and let stand a few minutes.
  2. Add seasoned salt and pepper to taste.
  3. If mixture is too dry, stir in a little milk.
  4. Add pimiento, put in 1-quart casserole and sprinkle with cheese.
  5. Bake in hot oven (400° F) 15 minutes, or until heated. Sprinkle with parsley.
