Ham and Mashed Potato Casserole
Ingredients
- 2 cups mashed potatoes (prepared without salt)
- 1 green onion, finely sliced
- 1/4 teaspoon thyme
- 1 to 1 1/2 cups diced Chicagoland Ham
- Seasoned salt and pepper
- Milk
- 1 pimiento, cut up
- 1/2 cup shredded cheddar cheese
- chopped parsley
Instructions
- Mix first four ingredients and let stand a few minutes.
- Add seasoned salt and pepper to taste.
- If mixture is too dry, stir in a little milk.
- Add pimiento, put in 1-quart casserole and sprinkle with cheese.
- Bake in hot oven (400° F) 15 minutes, or until heated. Sprinkle with parsley.
