Ham-Bean Pot
Ingredients
- 2 cups dried large lima beans
- 2 teaspoons salt
- 1 onion, sliced
- 1/2 cup diced green pepper
- 1 tablespoon butter or margarine
- 1/4 cup catsup
- 1/4 cup molasses
- 1 tablespoon vinegar
- Dash of hot pepper sauce
- 1 tablespoon vinegar
- Dash of hot pepper sauce
- 1 teaspoon dry mustard
- 1 1/2 cups Chicagoland Ham scraps and small pieces
Instructions
- In large saucepan, bring limas and 6 cups water to boil and boil 2 minutes.
- Remove from heat, cover and let stand 1 hour.
- Add salt and simmer 25 minutes, or until tender. Drain, reserving liquid.
- Cook onion and pepper in the butter 2 to 3 minutes.
- Combine catsup and next 4 ingredients.
- Add about 1 cup bean liquid.
- In 2 1/2-quart casserole or bean pot, layer beans, pepper-onion mixture, ham and liquid.
- Bake in slow oven (325°F) about 1 hour.
