Ham-Bean Pot

Ingredients

  • 2 cups dried large lima beans
  • 2 teaspoons salt
  • 1 onion, sliced
  • 1/2 cup diced green pepper
  • 1 tablespoon butter or margarine
  • 1/4 cup catsup
  • 1/4 cup molasses
  • 1 tablespoon vinegar
  • Dash of hot pepper sauce
  • 1 tablespoon vinegar
  • Dash of hot pepper sauce
  • 1 teaspoon dry mustard
  • 1 1/2 cups Chicagoland Ham scraps and small pieces

Instructions

  1. In large saucepan, bring limas and 6 cups water to boil and boil 2 minutes.
  2. Remove from heat, cover and let stand 1 hour.
  3. Add salt and simmer 25 minutes, or until tender. Drain, reserving liquid.
  4. Cook onion and pepper in the butter 2 to 3 minutes.
  5. Combine catsup and next 4 ingredients.
  6. Add about 1 cup bean liquid.
  7. In 2 1/2-quart casserole or bean pot, layer beans, pepper-onion mixture, ham and liquid.
  8. Bake in slow oven (325°F) about 1 hour.
