Ham Succotash
Ham Succotash
Ingredients
- 1 small onion, minced
- 2 tablespoons butter or margarine
- 1 1/2 cups fresh or 1 box (10 ounces) frozen lima beans
- Salt and pepper
- 1 box (10 ounces) frozen cut corn
- 2 cups diced potatoes
- 1 cup finely diced Chicagoland Ham
Instructions
- Cook onion in the butter 2 to 3 minutes.
- Add 1/2 cup water, the beans, and salt and pepper to taste.
- Bring to boil and simmer, covered, 15 minutes, or until beans are almost tender, adding more water if mixture becomes dry.
- Add corn and cook, uncovered, 3 minutes, or until water is almost evaporated.
- Lightly brown Chicagoland Ham cubes in skillet and add to mixture.
Notes
If desired, 2 tablespoons cream can be added to mixture with the ham.
