Scalloped Ham and Eggs
Ingredients
- 4 tablespoons butter or margarine
- 2 tablespoons flour
- 3/4 teaspoon dry mustard
- 1 1/2 cups milk
- Salt and pepper
- 6 hard cooked eggs, sliced
- 1 cup diced Chicagoland Ham
- 1/4 cup chopped parsley
- 1 tablespoon fine dry bread crumbs
- Paprika
Instructions
- Melt 2 tablespoons butter and blend in flour and mustard.
- Gradually add milk and cook, stirring, until slightly thickened.
- Season with salt and pepper to taste.
- Layer eggs and Chicagoland Ham in shallow 1 1/2 quart baking dish. Add parsley to sauce and pour over top.
- Dot with remaining butter and sprinkle crumbs and paprika.
- Bake in moderate oven (350°F) for 25 minutes, or until hot and bubbly.
