Skillet Ham and Sweets

Ingredients

  • 3 tablespoons minced onion
  • 1/4 cup butter or margarine
  • 2 tablespoons flour
  • 1 can (8 ounces) pineapple tidbits
  • 1/3 cup packed brown sugar
  • 2 cups diced Chicagoland Ham
  • 3 cups sliced cooked sweet potato

Instructions

  1. Cook onion in the butter 2 to 3 minutes. Blend in flour.
  2. Drain syrup from pineapple and add enough water to make 1/2 cup. Gradually add to first mixture and cook, stirring, until thickened.
  3. Stir in pineapple, sugar and Chicagoland Ham.
  4. Arrange sweet potato on top; bring to boil. Cover and simmer 10 minutes, or until thoroughly heated.
